Wine Storage

A Quick Guide To Good Wine Cellaring

Your wine is a valuable and treasured asset, too important to risk being ruined by poor cellaring. Kennards Wine Storage provides the ideal environment for long-term wine storage to help it mature to its full potential. Our private cellars are available throughout Sydney, Melbourne, Brisbane and Adelaide for your convenience.
You can now easily enjoy the benefits of your own dedicated cellar space.

Temperature Stability

Wine will prematurely develop if stored in an environment that has large temperature variations, particularly if these occur frequently. Wine should never be stored in temperatures that are too cold (under 12ºC) as this will inhibit the development of the wine. Similarly, wine stored in temperatures that are too warm (over 19ºC) will cause overly rapid development of your wine. Our temperature control systems ensure the wine cellar temperature is very stable.

The variations cause corks to expand and contract which leads to oxidation of the wine.

Suitable Humidity

If wine is stored in conditions that are too dry, the cork will shrink and cause leakage. Too moist, and mould and contamination may occur. Kennards Wine Storage maintains moderate humidity levels (55%-75%) to avoid these problems and assist in the optimum wine development conditions.

Movement & Handling

Wine is a sensitive and fragile product. Frequent jolts or vibrations during its development can be detrimental. Storing wine next to the fridge or in the laundry exposes it to constant vibration and should be avoided. At Kennards Wine Storage you control every movement or handling of your wine. You don’t have to worry about storemen or forklifts moving it, like in a managed warehouse operation. No one else has access to your wine, so all movement and handling is performed by you.

Light & Storage

Frequent exposure to light is detrimental for a wines development. The Kennards Wine Storage Cellars are enclosed and the wine will only see the light when you visit. Again, when your wine is not under your control, who knows what light it is getting?

Wine Oxidation

Wine Bottles should be layed on their sides to keep the corks moist, help prevent cork shrinkage. If the cork shrinks, small amounts of air can enter the bottle and the wine will then oxidise. Oxidation then decomposes the wine which leads to loss of desirable flavours and change in colour. However, with the advent of the screw caps replacing corks, the oxidation problem may soon be a thing of the past.

Screw Cap Wines in Storage

Screw cap bottle closures have dramatically changed wines. The inert nature of the screw cap differs from the natural, organic and inconsistent cork seal. Screw caps have been adopted in Australia on-masse by producers.

Cork taint and wine oxidation have been eliminated.

Initial concerns about wine cellaring being compromised have been laid to rest. Wines sealed and stored with screw caps in the 1980's are tasting beautifully in recent taste tests. It is considered, that there is enough oxygen in the headspace for suitable aging. In addition, much of the aging and settling process requires no oxygen.

Screw caps actually offer a more predictable and consistent aging process so should make wine cellaring even more rewarding.
